Can I control which fields or columns show up in my exported reports — for example, hiding the Episode field on a report I don't want it on?

It depends on the report type:
HTML, Text, and CSV reports let you pick the fields they include. Go to Settings > History Reports > Report Contents and select which fields you want in those report types.
Fixed-format reports — such as the Camera Report — use a set layout that can't be customized. You can't add or remove fields from these. However, a field that has no value will simply appear blank: for example, if the Episode field is empty in your project (tap PROD > Edit Project), it won't print anything on the report.
So if your goal is to keep a particular field off a fixed-format report, the workaround is to leave that field empty in the project rather than to hide it in the report settings.
