The day we just shot was a pre-shoot day (Day 0), but MovieSlate's Notes and History keep defaulting to Day 1. Is there a way to label a shoot as Day 0? And if I've already logged takes as Day 1, can I change them to Day 0 after the fact?

Yes. MovieSlate lets you set any shooting-day number you like, including Day 0 for a pre-shoot day.
To label the current shoot as Day 0:

  1. Tap the DAY field.
  2. Enter 0.

New takes, notes, and History entries you log from that point on will be recorded under Day 0.
For multiple pre-shoot days, you can enter negative day numbers — -1, -2, and so on — so each pre-shoot day gets its own distinct number.
Tip: Set the DAY field before you start logging that day's takes. If MovieSlate reverts to Day 1, re-tap the DAY field and confirm the value is entered.
If you already logged takes as Day 1 and want to relabel them as Day 0 after the fact, you don't have to re-enter each take. Use MovieSlate's Search and Replace feature to change the day value across the takes that were already recorded. (The same approach is used to assign negative shooting days to takes that have already been logged.)
